TodayI will share how to make Chanar Payesh/ Paneer Kheer/ Indian Cottage CheesePudding. Chanar payesh is a famous Bengali Sweet Dish, available inalmost all the sweet stalls in west Bengal. In chanar payesh, chena/chana(Indian cottage cheese or paneer) is cooked in milk with sugar and choppednuts.
Take 150 gm paneerGrate with the help of a vegetable grater
And keep it in a bowl
Boil water in a sauce pan and add acrushed cardamom
Add sugar and mix it with water todissolve fast.
Now the water starts boiling, add the grated paneer and let it boil with the water
Now the sugar water is almost dried andtake it out from the heat and keep it aside.
Now in another pan, heat milk.
Add a crushed cardamom
Chop the nuts
And add them in the milk, and mix them
Now milk is boiling, and the quantitywill be reduced to one third, so stir it continuously otherwise it will burn.
Now the quantity of the milk reduced toone third and became thick; now switch off the flame and pour the thick milkinto the bowl of paneer and slowly mix them.
Add grated nuts and allow them to cool.
And transfer them to serving bowl and serve,or you can refrigerate it.
