The Mutton Dak Bungalow Recipe is very old i.e. British era. This dish has aColonial lineage. As the story goes, Dak bungalows proliferate in India duringthe days of the East India Company. When the Govt. officials were in late whileon an official tour, they used to spend the night in the dakbungalow means Govt. rest house. There used to have one khansamah(cook,steward cum caretaker) or darwan who used to prepare the meal with limited andold utensils. The meal comprises rice, dal, veg curry, salad, and one chickenor mutton dish. They prepared the meal by using the local spices or ingredientsor whatever is the availability. Mutton Dak bungalow was also made with veryfew aromatic whole spices and became very delicious.
Clean and wash the mutton chunks, and put them in a mixingbowl, and add all the ingredienwritten ts in ‘Formarinating the mutton’ and mix them well, and keep them aside for4-5hours to marinade.
Heat a fry pan and add theingredients written in ‘To make dakbungalow spices’Section, and dry roastthem
Allow them to cool in roomtemperature and with the help of sil-nora or blender, make a coarse pasteandkeep them aside
Heat oil in the kadai, andfry the eggs and potatoes seperately (which were rubbed with turmeric and redchili powder) and keep them aside
Add cumin,radhuni and bayleaves for tempering
As they splutter and sizzle,add the sliced onions anf stir them until translucent
Add chopped ginger-garlic andsaute them for a minute
Add the spices(red chili,kashmiri chili, turmeric and cumin powder) and stir them for 2 minutes
Now add the chopped tomatoand saute them for a minute
Add the marinated muttonchunks with marinate, and stir them for two minutes
Now add the dak bungalow spices and mix them well and stir them continiously until they become dry andcolor changes to dark brown
Add water and salt
Cover the lid and allow themto cook for one hour on low-medium flame ( in between check 4-5 times, ifrequires then add water)
Open the lid after one hourand add the fried potatoes and cook them for another 15 minutes
Now add the fried eggs andmix them well, and cook for another 2-3 minues
Spread chopped corianderleaves over the curry , and serve hot with rice
