Mutton Dak Bungalow Recipe

The Mutton Dak Bungalow Recipe is very old i.e. British era. This dish has a Colonial lineage. As the story goes, Dak bungalows proliferate in India during the days of the East India Company. When the Govt. officials were in late while on an official tour, they used to spend the night in the Dak bungalow means Govt. rest house. There used to have one khansamah(cook, steward cum caretaker) or darwan who used to prepare the meal with limited and old utensils. The meal comprises rice, dal, veg curry, salad, and one chicken or mutton dish. They prepared the meal by using the local spices or ingredients or whatever is the availability. Mutton Dak bungalow was also made with very few aromatic whole spices and became very delicious.

In this recipe the marinated mutton pieces are simmered in a thick gravy made with onions, garlic, and ginger and added with potatoes and eggs finished in a warm, spicy, special dak bungalow spice flavored gravy; this is How to make this delectable mutton dak bungalow.

At that time there was no availability of a pressure cooker or advanced crockery, so I am also preparing this dish without a pressure cooker, and old utensils, to reflect the dish more authenticate.

Mutton Dak Bungalow Recipe

Types of equipment required for this recipe are

  • Grinding stone/Sil-Nora/Blender
  • Kadai /Hard bottomed pan
  • Spatula
  • Mixing bowl

The ingredients required for this recipe are

For marinating the mutton

  • Mutton -500 gms
  • Yogurt-1/2 cup
  • Ginger-garlic paste-1 tbsp
  • Mustard oil-2 tbsp
  • Turmeric powder-1 tbsp
  • Red chili powder-1/2 tbsp
  • Coriander powder-1 tbsp
  • Salt to taste

To make dak bungalow spices

  • Black cardamom (badi elaichi)-1
  • Green cardamoms-3
  • Cinnamon-1/2 inch stick
  • Cloves-5
  • Black peppercorns-10
  • Mace-1 blade
  • Nutmeg-1/4th
  • Whole red chili-2
  • Cumin seeds-1/2 tbsp

For making the Dak bungalow curry

  • Potatoes quartered or halved-3
  • Boiled eggs-4
  • Cumin seeds-1/2 tbsp
  • Radhuni-1/2 tbsp
  • Bay leaves-2
  • Onions(cut into medium slices)-6
  • Tomato (chopped)-1
  • Cumin powder-1/2 tbsp
  • Red chili powder-1/2 tbsp
  • Kashmiri chili powder-1/2 tbsp
  • Turmeric powder-1/2 tbsp
  • Chopped ginger-garlic-2 tbsp
  • Mustard oil-3 tbsp( including frying the eggs and potatoes)
  • Salt to taste
  • Chopped coriander leaves to garnish-2 tbsp

How to make Mutton Dak Bungalow Recipe

Clean and wash the mutton chunks, and put them in a mixing bowl, and add all the ingredients in ‘For marinating the mutton’ and mix them well, and keep them aside for 4-5 hours to marinade.

Heat a frying pan and add the ingredients written in ‘To make dak bungalow spices’ Section, and dry roast them

Allow them to cool at room temperature and with the help of a sil-nora or blender, make a coarse paste and keep them aside

Heat oil in the kadai, and fry the eggs and potatoes separately (which were rubbed with turmeric and red chili powder) and keep them aside

Add cumin,radhuni, and bay leaves for tempering

As they splutter and sizzle, add the sliced onions and stir them until translucent

Add chopped ginger-garlic and saute them for a minute

Add the spices(red chili, Kashmiri chili, turmeric, and cumin powder) and stir them for 2 minutes

Now add the chopped tomato and saute them for a minute

Add the marinated mutton chunks with marinate, and stir them for two minutes

Now add the dak bungalow spices and mix them well and stir them continuously until they become dry and the color changes to dark brown

Add water and salt

Cover the lid and allow them to cook for one hour on low-medium flame ( in between check 4-5 times, if requires then add water)

Open the lid after one hour and add the fried potatoes and cook them for another 15 minutes

Now add the fried eggs and mix them well, and cook for another 2-3 minutes

Spread chopped coriander leaves over the curry, and serve hot with rice

  • 1/2 tbsp radhuni
  • 6 Onions(cut intomedium slices)
  • 1 tomato(chopped)
  • 1/2 tbsp cumin powder
  • 1/2 tbsp red chili powder
  • 1/2 tbsp kashmiri red chili
  • 1/2 tbsp  turmeric powder
  • 2 tbsp Chopped ginger-garlic
  • 3 tbsp Mustard oil
  • salt
  • 2 tbsp Chopped coriander leaves

Instructions

  • Open the lid after one hourand add the fried potatoes and cook them for another 15 minutes
  • Now add the fried eggs andmix them well, and cook for another 2-3 minues
  • Spread chopped corianderleaves over the curry , and serve hot with rice
