Tempting Aam Pora Dal / Roasted Mango Dal

Today I will share how to make Tempting Aam Pora Dal / Roasted Mango dal, which is different from popular Bengali aam dal. It is made with roasted mango, tur, and chana dal (pigeon peas and chickpea lentils), and other spices.

Equipment used

  • Mixing bowl
  • Pressure cooker
  • Frying pan
  • Spatula

Ingredients

  • Raw mango-1
  • Tur dal-1/2 cop
  • Chana dal-1/2 cup
  • Baking soda-1/2 tbsp
  • Cardamom-1
  • Star anise-1
  • Cumin (whole)-1/2 tbsp
  • Red chili-1
  • Garlic (chopped)-2 tbsp
  • Onion (Chopped)-1
  • Cumin-coriander powder-1/2 tbsp
  • Turmeric powder-1/2 tbsp
  • Red chili powder-1/2 tbsp
  • Kashmiri chili powder-1/2 tbsp
  • Dry ginger powder-1/4 tbsp
  • Chopped coriander leaves-2 tbsp
  • Ghee-1 tbsp
  • Bay leaves-2
  • Cinnamon-1/2 inch stick
  • salt

How to make Tempting Aam Pora Daal / Roasted Mango Dal

Take a roasting net, and roast a mango

Peel it nicely

Now take out the pulp from the mango and put them into the blender jar and make a smooth paste

Take a pressure cooker, then add half a cup of tur dal and chana dal

Add water, baking soda, and salt

Then add cinnamon. Cardamom and star anise cover it and go for 2 whistles to boil the dal nicely

Heat ghee in a pan

Then add red chili and cumin for tempering, add chopped garlic, and sauté them for a minute

Add chopped onion and stir them for 3-4 minutes, or till they become translucent

Now add all the powdered spices and stir them continuously till the raw smell goes off

Add roasted mango pulp (1/2 cup)

Stir them for a minute

Now add the boiled dal and mix them well, and cook for another 2 minutes

Add chopped coriander leaves

Transfer them to a serving bowl and serve hot with rice or roti.

  • pressure cooker

Ingredients
  

  • 1 raw mango
  • 1/2 cup tur dal/pigeon peas
  • 1/2 cup chana dal(chickpea lentils)
  • 1/2 baking soda
  • 1 Cardamom
  • 1 star anise
  • 1/2 tbsp cumin seeds
  • 1 red chili
  • 1 garlic (chopped)
  • 1 Onion(chopped)
  • 1/2 tbsp cumin- coriander powder
  • 1/2 tbsp red chili powder
  • 1/2 tbsp  turmeric powder
  • 1/2 tbsp kasmiri chili powder
  • 1/4 tbsp dry ginger powder
  • 1 tbsp Chopped coriander leaves
  • 1 tbsp ghee
  • 2 bay leaves
  • 1/2 inch cinamom stick
  • salt

Instructions
 

  • Takea roasting net, and roast a mango
  • Peelit nicely
  • Nowtake out the pulp from the mango and put them into the blender jar and make asmooth paste
  • Takea pressure cooker, then add half cup of tur dal and chana dal
  • Addwater, baking soda and salt
  • Thenadd cinnamon. Cardamom and star anise cover it and go for 2 whistles to boilthe dal nicely
  • Heatghee in a pan
  • Thenadd red chili and cumin for tempering, add chopped garlic and sauté them for aminute
  • Addchopped onion and stir them for 3-4 minutes, or till they become translucent
  • Nowadd all the powder spices and stir them continuously till the raw smell goesoff
    Addroasted mango pulp (1/2 cup)
  • Stirthem for a minute
  • Nowadd the boiled dal and mix them well, and cook for another 2 minutes
  • Addchopped coriander leaves
  • Transferthem to a serving bowl and serve hot with rice or roti.
