During my stay in Rajasthan (Jodhpur, Jaipur, Jaisalmer and Barmer) we used to visit many hotels and restaurants. Though non-veg restaurants were less in Rajasthan still we get some non-veg hotels, where my favorite was spicy lal maas and crispy tanduri roti with salad. this is a traditional Rajasthani Mutton dish that is spicy and deep red in color which goes well with Indian tanduri roti or rice. Here is how to make spicy Rajasthani laal maas/spicy Rajasthani mutton curry.

Ingredients

  • Mutton(goat meat)-400 gm
  • Mustard oil -1/2 cup
  • 3-4 Clove
  • Black peppers -5
  • Black cardamom, Green cardamom-3-4 each
  • Cinnamon 1 inch
  • Bay leaves -2
  • Onion –two big
  • Garlic Cloves -8
  • ginger garlic paste-3 tsp
  • 1 cup Curd
  • red chilli powder-2 tsp
  • Kashmiri red chili powder-1 tsp
  • Turmeric powder-1 tsp
  • Coriander powder-1 tsp
  • cumin powder- 1 tsp and cumin seed-1/2 tsp
  • tomato-1(you can use lemon juice)
  • Salt to taste

how to make spicy Rajasthani laal maas

  • Wash the mutton thoroughly
  • In a large bowl, add mutton, yogurt, cumin powder, Kashmir red chili and hot red chili powder, coriander powder, turmeric powder, and one tablespoon of ginger garlic paste and mix thoroughly, keep it aside for one hour at least to marinate.
  • Heat oil in a heavy bottom Karahi/pan, add cloves, black pepper,cumin, red chili, black cardamom, green cardamom, cinnamon and tej patta
  • Now add onions and sauté, then add ginger, garlic paste.
  • Add mutton to the onions and sauté for 2 minutes and add curd and fry for 3-4 minutes.
  • Now is the time to add all the spices i.e. red chili powder, turmeric powder, coriander powder, roasted cumin powder, tomato, and salt, if required add some water and fry till the oil starts separating.how to make spicy Rajasthani laal maas
  • Add a cup of water and cover the pan and cook the mutton till becomes soft.
  • (If you are using a pressure cooker go for two whistles and wait to release the pressure automatically)
  • Open the lid and check whether the mutton becomes soft or not, if it is okay then serve hot with Indian flatbread or rice.how to make spicy Rajasthani laal maas
