How To Make kulcha

Today I will share step-by-step How To Make Alu kulcha/ Aloo Kulcha recipe / Aloo Kulcha on tawa Which is a very simple recipe. The dough is prepared usually with all-purpose flour, but here I have taken wheat flour and all-purpose flour (2:1) mixed, to make it a little healthy. To knead the dough usually used yeast, but I used here yogurt and baking powder. Then it was rolled thick with help of the hand and dusted with sesame seeds and coriander leaves on one side and baked in an oven or tandoor, here I used tawa/griddle by making it upside down.

Equipment used

Ingredients

For Dough

  1. Whole wheat flour -2 cups
  2. All-purpose flour -1 cup
  3. Baking soda-1/3 tbsp
  4. Oil-2 tbsp
  5. Yogurt-1/2 cup
  6. Sugar-1 tbsp
  7. Salt-1 tbsp
  8. Sesame seeds-1 tbsp
  9. Coriander leaves (chopped)-3 tbsp
  10. Butter-50 gm
  11. Water as required

For stuffing

  1. Boiled potato-3
  2. Chopped onion-2
  3. Chopped green chili-2
  4. Grated ginger-1 tbsp
  5. Chopped coriander leaves-2 tbsp
  6. Red chili powder-1/2 tbsp
  7. Roasted cumin powder-1 tbsp
  8. Dry mango powder-1/2 tbsp
  9. Salt-1/2 tbsp
  10. Roasted coriander powder-1/2 tbsp

In a big mixing bowl add 2 cups of wheat flour and 1 cup of all-purpose flour

Add Sugar, salt, and baking soda

Mix them well

Now add oil and yogurt

Mix them and by adding water in 2-3 stages knead the dough

Add 1 tbsp oil, cover it and let it rest for half an hour

Open the cover, flatten it and apply melted butter over it

Sprinkle dry flour over it

Fold it from both the sides

Again flatten it , apply butter and sprinkle flour

Again fold from both the sides

Divide 12 equal parts and make them lemon size balls and apply oil to them

Now in a mixing bowl, add boiled potato and all other ingredients mentioned in “for stuffing”

Now mix them well with the help of your hand

Take one ball, flatten it and put the small portion of stuffing, and seal it with the help of your finger.

Now flatten them to a circle shape of approximately 3 inches in diameter with the help of your finger or rolling pin, and adding with sesame seeds and coriander leaves on one side.

Now heat a tawa/griddle; Take a kulcha, apply little water on one side and gently place it on the hot tawa

After a minute of roasting one side of the kulcha, make the tawa upside down to roast the other side of the kulcha

Apply butter to the upper side and transfer them to a serving plate and serve hot with raita and chole.
