Clean and then simmered in a thick gravy made with tomatoes, onions, garlic and ginger and sometimes added with potatoes finished in a warm, spicy, cumin, coriander flavored sauce; and this is how to make alu diye dumurer torkari/Raw fig curry.

Ingredients:

  • Green figs – 250 gms,
  • Potato – 1
  • Ginger paste- 1 teaspoon,
  • Turmeric powder- 1 teaspoon
  • Cumin powder-1 teaspoon
  • Red chili powder-1/2 teaspoon
  • garam masala powder-1/2 teaspoon
  • Whole cumin seeds- 1/2 tea spoon
  • Mustard oil-2 tea spoons
  • Ghee-1 tea spoon
  • Bay leaves-2
  • Salt to taste

  • First wash the green figs and cut it into two halves. Then you have take it out the cluster of flowers and seeds inside it with the help of a small spoon. Make sure that you cook the skin and throw away the inner flower.
  • Peel the potatoes and cut into small square pieces.
  • Heat oil in a pan and add the cumin seeds, green chili and bay leaves for tempering.
  • As the cumin seeds begin to crackle add the potatoes and cook for 2 minutes then add sliced onions and cook for another 3-4 minutes or till the onions become transparent.
  • Now add the ginger and the spices i.e. turmeric, cumin, red chili powder then add figs after mixing it properly, add salt and cook for another 5 minutes, add water and cover the lid, allow it to cook for 10 minutes to boil the figs and potatoes.how to make alu diye dumurer torkari
