How to make delicious roasted cashew chicken/Indian Cashew Chicken curry
The marinated chicken chunks are fried or roasted and then simmered in a thick gravy made with cashews, tomatoes, onions, garlic and ginger and sometimes added with capsicum or bell paper(red or yellow) finished in a warm, spicy, cumin flavored sauce which makes a delicious roasted cashew chicken.

- Chicken-600 gm (cut into 4 pieces, one from leg side and other one is from body side)
- Curds-1 tsp
- Ginger-1 inch approx
- Garlic paste-1 tsp
- Cashew-1/2 cup
- Red chili-2
- Butter -25 gm
- Oil-1 tsp
- Red chili powder-1/4th tsp
- Turmeric powder-1 tsp
- Cumin powder-1/2 tsp
- Coriander leaves for garnishing
- Salt to taste
How to make delicious roasted cashew chicken
Clean and wash the chicken thoroughly
Marinate the chicken pieces with curds, turmeric powder, garlic paste and salt.
Take a hard bottomed pan, heat little oil, and once the oil is hot add sliced onion, ginger, cashew and red chili.
Fry or roast all the ingredients and allow them to cool at room temperature.Once the ingredients are at room temperature, put them in a jar of blender and make a smooth paste.
Now take a tawa or griddle, add little oil and heat it then roast or fry the chicken pieces thoroughly, and keep it aside.
Now in the same pan (where the ingredients are roasted) add butter and heat it, then add the paste of cashew and onion.
Stir it continuously for 2-3 minutes then add turmeric powder, cumin powder, chili powder and salt and stir it for another2-3 minutes in high flame.
Once the raw smell of the spices are goes off add water (approx 1 cup) and allow it to cook for 2 minutes.Then add the chicken pieces and mix it well and cover the lid for at least 10 minutes to boil the chicken pieces.
Open the cover and check the chicken pieces, boiled properly or not. If everything is alright, then switch off the flame and take the chicken out from the oven and transfer it to the serving plate.Garnish it with coriander leaves and serve hot with rice or flat bread or tandoori roti.
