Today I will share how to make Chanar Payesh/ Paneer Kheer/ Indian Cottage Cheese Pudding. Chanar payesh is a famous Bengali Sweet Dish, available in almost all the sweet stalls in west Bengal. In chanar payesh, chena/chana (Indian cottage cheese or paneer) is cooked in milk with sugar and chopped nuts. You can prepare it in two ways. Either you prepare chhena/chana and then prepare the dish or you can make it with paneer( homemade or from a local market); in both cases, the taste is almost the same

How To Make Chanar Payesh

Equipment needed

  1. Milkpan
  2. Mixing bowl
  3. Big spoon
  4. vegetable grater

Ingredients

  1. Chena/chana/Paneer-150 gm
  2. Milk-750 ml
  3. Sugar-1 cup/150 gm
  4. Cardamom-2
  5. Chopped nuts-3 tbsp

Take 150 gm paneer

Grate with the help of a vegetable grater

And keep it in a bowl

Boil water in a saucepan and add a crushed cardamom

Add sugar and mix it with water to dissolve fast.

Now the water starts boiling, add the grated paneer and let it boil with the water

The sugar water is almost dried take it out from the heat and keep it aside.

Now in another pan, heat milk.

Add a crushed cardamom

Chop the nuts

And add them to the milk, and mix them

Now milk is boiling, and the quantity will be reduced to one-third, so stir it continuously otherwise it will burn.

The quantity of the milk was reduced to one-third and became thick; now switch off the flame and pour the thick milk into the bowl of paneer and slowly mix them.

Add grated nuts and allow them to cool.

And transfer them to a serving bowl and serve, or you can refrigerate it.
