If you are taking eggs with same spice e.g onion, ginger garlic paste with all powders like turmeric, coriander, cumin and red chili. The spiced yellow fried eggs (in Bengali it’s called dim) simmered in a thick gravy made with posto/poppy seeds/khas khas and ginger and may be added with tomatoes finished in a warm, spicy, poppy seeds sauce, This is how to make delicious dim posto /egg poppy seed curry.
Ingredients of dim posto
Posto/poppy seeds- 4 tspoon
turmeric powder- 1 tspoon
panch phoron-1/2 t spoon (It comprises mouri (fennel seeds), methi (fenugreek seeds), kaalo jeere (black cumin seeds), zeera(cumin seeds), and a typically Bengali spice, called radhuni)
Salt to taste
How to make delicious dim posto /egg poppy seed
In a blender add poppy seeds, tomato, green chili and make a smooth paste and keep aside.
Take a pan, heat oil and fry the boiled eggs after rubbing with turmeric and keep aside.
add panchphoron in the same oil.
As they splutter and sizzle add the poppy seeds paste and cook for two minutes.
Now add little water (approx ½ cups) and salt to taste for proper consistency of the gravy.
Now you can see the oil is coming out from the gravy, so you can add the boiled and fried eggs and cook for two minutes.
Take out from the oven and serve hot with rice or paratha.
