Though it is not a popular recipe, I like this, because the highly nutritious ol(elephant foot yam) makes the motorer dal(Yellow split peas) thick, tasty and healthy of course. Boiled ol (elephant foot yam) and dal cooked with onion, garlic, and ginger and tempered with panchphoron; this is how to make ol diye motorer dal/Bengal gram with elephant foot yam.

Ingredients

  • 1 cup motorer dal (Yellow split peas) (soaked for 2 hours)
  • 250 gm ol (elephant foot yam, cut into cube))
  • Onion(big)-01 (chopped)
  • Garlic-5 cloves(chopped)
  • Ginger-1/2 inch(chopped)
  • panch phoron-1/2 t spoon    (It comprises mouri (fennel seeds), methi (fenugreek seeds), kaalo jeere (black cumin  seeds), zeera(cumin seeds), and a typically Bengali spice, called radhuni)
  • green chili-2(chopped)
  • turmeric , cumin and red chili powder-1 tbsp each
  • bay leaves-2
  • 2 tbsp. oil
  • Salt to taste
  • Dry mango powder/amchur powder-1 tsp

  • Wash soaked dal thoroughly and cook in a pressure cooker with cube cut ol(elephant foot yam) 2 cups water, bay leaves and salt till one whistle comes.After opening the lid smashed the boiled ol by the help of a ladle.

  • In a hard bottomed pan heat 2tbsp. oil and temper it with panch phoron.
  • As they splutter and sizzle add chopped garlic onion and ginger, sauté for 2 minutes.
  • Add turmeric, dry mango, cumin and red chili powder and sauté for 2 minutes.
  • Then add the boiled dal and cook for another 5 minutes in a medium heat.
  •  Serve with roti or steam rice.
