Zarda Pulao Zarda Meethe Chawal

Zarda Pulao / Zarda Meethe Chawal is a traditional and famous ghee-enriched saffron-colored sweet rice dish, exquisite flavored with cardamom and other fragrant spices, and loaded with cashew, almonds, and raisins; which is famous in North and east India and also Bangladesh and Pakistan

It is served during festivals, weddings, or other auspicious occasions, where the delicious cardamom-flavored sweet rice provides an exciting and satisfying end to any meal.

Zarda Pulao Zarda Meethe Chawal

The name ‘zarda‘ comes from the Persian word ‘zard’, which means ‘yellow’, because the food color and saffron added to the rice gives it a vibrant yellow color. Zarda is basically served after a meal. It is quite similar to Persian saffron rice pudding or Shole Zard a traditional Iranian dessert, and Zerde a traditional Persian, Iraqi, and Turkish, dessert. a traditional Turkish dessert.

Ingredients required for Zarda Recipe | Zarda Rice | Sweet rice | Meethe Chawal recipe

  • Ghee/Clarified butter-3 tbsp
  • Long grain basmati rice(soaked)-300 gm
  • Almonds-10
  • Cashew-10
  • Raisins-15
  • Cinnamon-1/2 inch stick
  • Cardamom-2
  • Cloves-5
  • Saffron thread-6-8
  • Orange/Yellow food color-1 drop
  • Sugar-1/2 cup

Preparation: How to make Zarda Pulao / Zarda Meethe Chawal

  • Heat 1 tbsp ghee in a pan and add the almond and cashew, when they become light brown in color, then take them out from the ghee

Add raisins and stir them for 20 seconds and take them out from the ghee

Now add some ghee to the pan and fry cardamom, cinnamon, and cloves for 30 seconds

Add water, followed by saffron and orange food color, and mix them well ( always the ratio of the water and rice is 1:1)

Now add the soaked rice, and mix them well

Cover the lid, and allow them to cook for 15 minutes on medium flame

Open the lid; now rice is cooked to almost 80 %; add the fried dry fruits, sugar, and ghee

Again cover the lid and allow them to cook for 5 minutes at a simmer

After 5 minutes turn off the flame, and rest them for another 10 minutes

Open the lid and serve
