Doi Ilish Recipe

Doi Ilish Recipe/Hilsa with curd is one of the special ilish recipes among others, due to its silky consistency and the tangy sweetness of the curd. In doi ilish, the marinated  Hilsa fish chunks are fried and then simmered in a thick gravy made with whisked yogurt, and mustard paste and finished in a warm, tangy flavored sauce.

Generally, I am not favored with adding spices in any recipe of Hilsa; the idea is not to suppress the flavor of hilsa, with the strong flavor of other spices.

The types of equipment used for this recipe are

  • Mixing bowl
  • Blender
  • Kadai/Fry pan
  • Spatula

The ingredients required for this recipe are

For marinating the fish

  • Hilsa/ Ilish fish chunks-4
  • Whisked Curd/Yogurt-1/2 cup
  • Turmeric powder-1/2 tbsp
  • Salt

For frying and making the gravy

  • Soaked mustard seeds-2 tbsp
  • Curd -1 cup
  • Green chillies-4
  • Turmeric powder-1/2 tbsp
  • Sugar-1/2 tbsp
  • Salt
  • Mustard oil-3 tbsp

How to make Doi Ilish Recipe/Hilsa with curd

For marinating the fish

Clean and wash the hilsa fish chunks, then put them in a mixing bowl

Add turmeric powder, curd, and salt

Rub the fish chunks with  them, and keep them aside for 15 minutes

For frying and making the gravy

Take 1 cup of curd and whisk it well

In a blender jar add soaked mustard seeds and green chilies, and make a smooth paste

Add the mustard paste to the whisked curd

Also add sugar, salt, and turmeric powder and mix them well, and keep them aside

Heat oil in a pan and add the marinated fish chunks and fry them on both sides(don’t over-fry them)

Once done, take them out from the oil and keep them aside

Add the curd-mustard paste, to the same hot oil and mix them well,

and cook them for 2 minutes on high flame adding 2 green chilies

Now add the fried fish chunks, and mix them well

Cook them for 2-3 minutes on low flame, and then turn off the flame

Serve hot with hot piping rice

For marinating thefish

  • Clean and wash the hilsa fish chunks , then put them in amixing bowl
  • Add turmeric powder, curd and salt
  • Rub the fish chunks with them, and keep them aside for 15 minutes

For frying and makingthe gravy

  • Take 1 cup of curd and whisk it well
  • In a blender jar add soaked mustard seeds and green chilies,and make a smooth paste
  • Add the mustard paste in the whisked curd
  • Also add sugar, salt and turmeric powder and mix them well,and keep them aside
  • Heat oil in a pan and add the marinated fish chunks and frythem both the sides(don’t over fry them)
  • Once done, take them out from the oil and keep them aside
  • Add the curd-mustard paste, in the same hot oil and mix themwell,
  • and cook them for 2 minutes on high flame adding 2 greenchilies
  • Now add the fried fish chunks, and mix them well
  • Cook them for 2-3 minutes on low flame, and then turn offthe flame
  • Serve hot with hot piping rice
