Katwa Datar Chorchori Recipe

I will share step on step how to make Katwa Datar Chorchori Recipe, which is very simple to cook and also mouth-watering. It can be prepared in both ways; you can prepare either with other veggies like potato, pumpkin, pointed gourd, or ridge gourd with sun-dried lentil fritters (bori) or you can prepare with fish head or prawns. Here I am preparing with fish head and other veggies.

Katwa Datar Chorchori Recipe

Equipment required

  • Frying pan with lid
  • Spatula

Ingredients

  • Katwa data-250 gm
  • Pumpkin-250 gm
  • Pointed gourd-2
  • Potato-2
  • Rohu fish head (fried)-1/4th of a full head
  • Bori/sun-dried lentil fritters ( big size)-4
  • Bay leaves-3
  • Panchphoron-1/2 tbsp
  • Cinnamon stick-1/2 inch
  • Cardamom-1
  • Black Pepper -5
  • Ginger paste-1 tbsp
  • Turmeric powder-1/2 tbsp
  • Cumin-coriander powder-1 tbsp
  • Red chili powder-1/2 tbsp
  • Mustard oil-1 tbsp
  • Sugar-1/2 tbsp
  • Salt to taste

How to make Katwa Datar Chorchori Recipe

Clean and wash the data and discard the leaves

Cut the data into 1-inch size

Heat oil in a pan and add panchphoron, bay leaves, and whole spices for tempering

As they splutter and sizzle, add the potatoes and pointed gourd and sauté them for a minute

Now add the data and pumpkin and sauté them for two minutes

Now add the ginger paste and stir them for a minute

Add turmeric powder, salt, and cumin-coriander powder and stir them till the raw smell goes off

Now add the fried fish head

Add red chili powder

Now add sugar and mix them well

 Add 2 cups of water and cover the lid, and allow them to cook for 6-7 minutes on low flame

Meanwhile, heat oil in a small pan, and fry the bori

Open the lid and add the fried bori and mix them well

Transfer them to a serving plate and serve hot with rice.

Ingredients
  

  • 250 gm Katwa data
  • 250 gm pumpkin
  • 2 pointed gourd/potol
  • 2 Potato
  • 1/4 Rohufish head (fried)
  • 4 Bori(sun dried lentil fritters)
  • 3 bay leaves
  • 1/2 tbsp panchforons -1/2 t spoon  (It comprises mouri (fennel seeds), methi (fenugreek seeds), kaalo jeere (black cumin  seeds), zeera(cumin seeds), and a typically Bengali spice, called radhuni)
  • 1/2 inch cinamom stick
  • 1 Cardamom
  • 5 Peppercorn
  • 1 tbsp ginger paste
  • 1 tbsp cumin- coriander powder
  • 1/2 tbsp  turmeric powder
  • 1/2 tbsp red chili powder
  • 1 tbsp Mustard oil
  • salt
  • 1/2 tbsp sugar

Instructions
 

  • Clean and wash the data and discard the leaves

  • Add turmeric powder, salt and cumin-coriander powder and stirthem till the raw smell goes off
  • Now add the fried fish head
  • Add red chili powder
  • Now add sugar and mix them well
  • Add 2 cups of water and cover the lid, and allow them tocook for 6-7 minutes in low flame
  • Mean while heat oil in a small pan, and fry the bori
  • Open the lid and add the fried bori and mix them well
  • Transfer them to a serving plate and serve hot with rice.
